Game & Fish Dish
CAJUN INJECTOR FRIED TROUT
OR SALMON

3 pounds Trout or Salmon fillets
1 gallon Cajun Injector Cottonseed Oil
1/2 tablespoon Cajun Injector Cajun Shake
1 tablespoon Original Louisiana Hot Sauce
1 egg beaten
1/2 cup milk
1 (10 ounce) bag Cajun Injector Fish Fry Mix

Cut fish into 8 (6 ounce) pieces. Preheat enough oil for deep frying to 350 degrees F. Season each piece of fish with Cajun Shake and hot sauce. Mix egg and milk together, then dip fish into egg wash. Shake off excess egg wash, then roll fish in fry mix; shake off excess fry mix. Slowly lower fish into oil, fry until golden brown. Remove fish and let drain on paper towels for a minute.

Cook time: 3-5 minutes
Yield: 8 (6 ounce) servings
