CAJUN KING BLACKENED SNAPPER

4 (6 ounce) Snapper fillets

1 (1.25 ounce) packet of Cajun King Char-Grilled
Blackened Seasoning

2 sticks melted butter
Chill fish pieces as cold as possible and maintain refrigerated until the moment of cooking. Melt butter and set aside. Heat a grill or cast iron skillet as hot as possible (white hot). Caution: fish may momentarily flame up when it comes into contact with hot surface. Completely immerse fish in the melted butter; remove and pat on char-grill seasoning. Sear on grill or skillet (creates heavy smoke), let fish cook for about a minute, then flip and sear reverse side. Remove from Grill when fully cooked. Fish may look burnt but it is not.
