CASA FIESTA BISON ENCHILADAS

1 tablespoon Cajun Injector Cottonseed Oil
1 pound ground bison
1 yellow onion diced
1/2 tablespoon Cajun Shake
1 tablespoon sugar
6 black olives chopped
12 corn tortillas
2 (10 ounce) can Casa Fiesta Enchilada Sauce
1/2 pound grated sharp cheddar cheese
4 green onions

Preheat oven to 375 degrees F. Heat oil in skillet over medium heat. Once oil is hot, add meat and onions until meat is brown and onions are soft. Stir in Cajun Shake, sugar, and olives, cook until all ingredients are hot. Place tortillas in a greased 9 x 13 baking dish, spoon meat mixture (evenly) on top of tortillas, put in another layer of tortillas, then pour enchilada sauce over top. Top with cheese and green onions. Bake at 375 degrees F for 15-20 minutes.
