In a mixing bowl, mix sour cream with one package of taco seasoning, place mixture back into container and refrigerate until ready to assemble tacos. Prepare a charcoal fire or preheat gas grill for direct grilling over high heat. Once grill is hot, spray with vegetable spray and grill fish until flaky, about 4 minutes per side. Remove from grill and heat taco wraps. While wraps are heating up, break the fish up into big chunks. Take each wrap and spread some of the sour cream mixture on one half, cover with lettuce, tomatoes, cheese, and fish. Roll up and serve with salsa.
