JALAPENO BUTTER PORK MEDALLIONS

1 pork tenderloin, silver skin removed

1 16 oz. Cajun Injector Jalapeno Butter Marinade
•
TT Cajun Shake
Preheat the oven to 350 degrees F. On the stovetop, preheat a cast iron grill pan on high heat. Lightly spray the grill with nonstick spray or olive oil. Cut the tenderloin into 2 oz. portions and inject with the Jalapeno Butter Marinade. Season with Cajun Shake. When the grill is ready, cook for 3 minutes on each side and then place in the pan in the oven for an additional 5 minutes or until the center reaches 165 degrees.
