LEMON BUTTER
GARLIC POACHED STRIPER
Ingredients:

1 lb. Striper Bass fillets
•
1 tbsp. olive oil
•
1 tsp. fresh parsley, minced
•
1 tsp. dried thyme leaves
•
1 clove garlic, minced
•
¼ cup dry white wine
•
1 tbsp. Cajun Injector Lemon Butter Garlic Recipe Marinade
•
¼ tsp. salt
•
black pepper to taste
•
1 green onion, thinly sliced
Preparation:
Heat olive oil in frying pan over medium high heat. Add herbs and garlic, stir about 30 seconds. Pour in wine and marinade. Add fillets and spoon liquid over the top. Sprinkle Fish with salt, pepper and onions. Cover and simmer gently for 7 to 9 minutes or until Fish turns opaque in center. Transfer Fish to platter, cover and keep warm. Increase heat to high and boil liquid approximately 1 to 2 minutes or until reduced to 2 to 3 tablespoons. Pour sauce over Fish and serve.
