•1 cup Cajun Injector Lemon Butter Garlic Marinade
•1/2 cup extra virgin olive oil
•1 ripe tomato sliced 1/4 inch thick
•1 red onion sliced 1/4 inch thick
•1 tablespoon chopped parsley
•4 tablespoons grated Parmesan cheese
•1 lemon juiced
Preheat oven to 400 degrees F. Pat the fillets dry and season both sides with Cajun Injector Quick Shake Lemon Pepper Seasoning and Louisiana Gold Pepper Sauce. Mix Cajun Injector Lemon Butter Garlic Marinade and olive oil in a small bowl. Place fish in a 12" x 10" baking dish and pour marinade over the fillets. Place the tomato slices over the fillets, then red onion slices. Place the dish in the over for 15 to 20 minutes or until fish is flakey. To serve, place fish on plate, spoon lemon butter sauce that fish was cooked in over top, and garnish with chopped parsley, grated Parmesan cheese, and fresh lemon juice. This dish goes well with grilled or steamed fresh vegetables.
