    SOUTHWEST BUFFALO BURGERS

3 lbs ground Buffalo
1 lb ground pork
2 cups Italian bread crumbs
2 large eggs
2/3 cup mesquite Cajun Injector BBQ
1½  tablespoon Cajun Shake
2 teaspoons garlic powder
1 8 ounce jar Casa Fiesta Whole Jalapenos
Cajun Injector Chicken Fry Mix
Cajun Injector Cottonseed Oil
Pepper Jack Cheese

In a large mixing bowl, combine the first 7 ingredients and mix by hand until thoroughly combined. Portion meat into burgers and cook on a charcoal or gas grill.  Drain the jalapenos and cut into lengthwise strips and pat dry with a paper towel. Batter according to the directions on the Cajun Injector Chicken Fry Mix and fry in Cajun Injector Cottonseed Oil at 350 degrees F. until golden brown. Remove and set aside. To serve, place a slice of pepper jack cheese on the burger and top with fried jalapeno strips.
