STUFFED FLANK STEAK

1 large Flank steak
•
6 ounces sliced mushrooms
•
2 bunches green onion
•
1pound Realtree Smoked Sausage
•
1pound Realtree Bacon
•
1 cup dry rub (brown sugar, coarse salt, paprika, crushed red pepper, garlic powder, onion powder, chili powder)
Dry rub the flake steak and set in the fridge overnight. Remove the flank steak and allow it to reach room temp. Chop the green inions and dice the sausage. Place the sausage, onions, and mushrooms on top of the flank steak and roll the flank steak penning it with toothpicks. Lay the bacon on top and set on a 350- 375º Big Green Egg or oven. Cook for 90 minutes or desired doneness.
